Pastry advice with Florent Cantaut
Pastry is a passion that I have been developing since I was 5 years old. It was therefore quite normal for me to integrate this profession and a real pleasure to devote the vast majority of my time to it today.
My apprenticeship was formalized through several internships and workshops in specialized centers such as: the National Superior Pastry School (ENSP), the Olivier Bajard International Pastry School, or the Bellouet Conseil Gastronomic School.
Over time, I have gained experience working with several renowned Relais et Châteaux Michelin stars and Palaces, in France and in Europe. We can cite for example
Le George Cinq *** (in Paris); Patrick Guilbaut *** (in Dublin); The Golden Lion * (Cologny Suisse), etc.
I then turned towards training, working for 10 years as a pastry trainer for international classes in the “Gastronomicom” and “FERRANDI Paris” schools. I now work as an International Pastry Consultant, since 2018.
Pastry consulting services
As a pastry consultant, I offer several services to catering professionals, but also to individuals.
The Master classes are an opportunity for novice or experienced pastry chefs to receive my pastry advice in order to improve their skills and clarify the constraints they are used to facing. During the demonstration workshops, you will be able to better understand the contours of the art of pastry making and solve your difficulties.
For establishment owners, Sweets-Consulting can help create your restaurant menu, a range of desserts or even train your staff. You will thus be able to benefit from my expertise for the realization of different types of pastries or travel cakes, chocolates, confectionery, ice cream, or even the making of artistic pieces (in sugar or chocolate) on the occasion of a given event.
Home lessons and pastry workshop animation
If you want to become a pastry ace, I can teach you how to make better cakes. You will no longer miss the basic recipes and will now be able to succeed even the more complicated recipes that you seemed impossible to do. With my inhome and tailor pastry courses, you will discover the secrets of the professionals and surprise your family or your guests with your future desserts.
During my inhome pastry workshops, I teach students how to use professional equipment properly. For example, you will learn how to make writing cones and how to use them correctly, or how to use the piping bag effectively to give specific shapes to your preparations. If you are having trouble making use of a robot or other more sophisticated equipment, I offer a technical workshop which is the best way to quickly solve this problem.
For students or apprentices, it is possible to organize a pastry workshop in Montpelier and everywhere else. In these cases, it is reinforcement courses, where you refine professional techniques. Home baking lessons can also be used for exam preparation or just to specifically master those baking recipes that you can't make.
