1000g Quince peeled and seeded
1 Vanilla bean "Epices mille saveurs"
Put 1000g of water in the Thermomix and add the Varoma.
Put the peeled quinces, seeded and sliced in the Varoma and cook 45 minutes Varoma mode and simmering (spoon symbol).
Empty the bowl and keep the cooking juice if you want to make a jelly by boiling it with the peels plus a little sugar.
Place the quince pieces in the Thermomix, add 700g of sugar, the vanilla "Epices mille saveurs" scraped and cook 30 to 40 minutes mode Varoma speed 4 with the cooking basket instead of the measuring cup to avoid projections. Check the cooking by putting a little quince paste on a cold plate to see its consistency.
Transfer the quince paste to a mould and let cool for at least 2 hours.
Once gellified correctly cut into any shapes you want and roll in sugar .
